Scotland currently has strengths in the following areas:
Primary and secondary processing – Primary processing is the conversion of raw materials into food commodities, whilst secondary processing is the creating of food products from their ingredients.
Convenience – Scotland is a major producer of convenience foods.
Functional foods – Also known as "health enhancing', these food products are designed and marketed to have specific health benefits. An example of a functional food is probiotic yoghurt drinks.
